- Shredded coconut - 100 grams
- Almond flour - 50 grams
- Butter - 50 grams
- Erythritol - 30 grams
- Ground walnuts - 50 grams
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Unsweetened almond milk - 50 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the shredded coconut, almond flour, and melted butter until well combined.
- Spread the coconut mixture evenly in a baking dish and press down firmly to form a base layer.
- In another bowl, combine the ground walnuts, erythritol, cinnamon, vanilla extract, and egg. Mix well until smooth.
- Spread the walnut mixture over the coconut base layer, smoothing it out evenly.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Remove from the oven and let it cool for 10 minutes before slicing into squares.
- Serve warm or at room temperature, optionally drizzled with extra erythritol syrup if desired.
