Ingredients

  • Shredded coconut - 100 grams
  • Almond flour - 50 grams
  • Butter - 50 grams
  • Erythritol - 30 grams
  • Ground walnuts - 50 grams
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Unsweetened almond milk - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the shredded coconut, almond flour, and melted butter until well combined.
  3. Spread the coconut mixture evenly in a baking dish and press down firmly to form a base layer.
  4. In another bowl, combine the ground walnuts, erythritol, cinnamon, vanilla extract, and egg. Mix well until smooth.
  5. Spread the walnut mixture over the coconut base layer, smoothing it out evenly.
  6. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  7. Remove from the oven and let it cool for 10 minutes before slicing into squares.
  8. Serve warm or at room temperature, optionally drizzled with extra erythritol syrup if desired.
