- Cauliflower Rice - 200 grams
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red Bell Pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Cherry Tomatoes - 100 grams, halved
- Lemon Juice - 2 tablespoons
- Vegetable Broth - 500 ml
- Parsley - 2 tablespoons, chopped
- Mint - 1 tablespoon, chopped
- Salt - to taste
- Black Pepper - to taste
- Paprika - 1 teaspoon
Steps
- In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the diced red bell pepper and cook for 3-4 minutes until softened.
- Stir in the cauliflower rice and cook for an additional 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer and cook for 10 minutes.
- Add the diced cucumber, halved cherry tomatoes, lemon juice, chopped parsley, mint, salt, black pepper, and paprika. Stir well and simmer for another 5 minutes.
- Adjust seasoning if necessary, then remove from heat and let cool slightly before serving.
