Ingredients

  • Cauliflower Rice - 200 grams
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red Bell Pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Cherry Tomatoes - 100 grams, halved
  • Lemon Juice - 2 tablespoons
  • Vegetable Broth - 500 ml
  • Parsley - 2 tablespoons, chopped
  • Mint - 1 tablespoon, chopped
  • Salt - to taste
  • Black Pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add the diced red bell pepper and cook for 3-4 minutes until softened.
  3. Stir in the cauliflower rice and cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer and cook for 10 minutes.
  5. Add the diced cucumber, halved cherry tomatoes, lemon juice, chopped parsley, mint, salt, black pepper, and paprika. Stir well and simmer for another 5 minutes.
  6. Adjust seasoning if necessary, then remove from heat and let cool slightly before serving.
