Ingredients

  • Red lentils - 100 grams
  • Cauliflower - 200 grams, riced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until fragrant.
  4. Stir in the riced cauliflower, cumin, and paprika, cooking for another minute.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the lentils and cauliflower are tender.
  6. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches. Return the soup to the pot.
  7. Season with salt, black pepper, and stir in the lemon juice. Heat through for another 2-3 minutes.
  8. Serve hot, garnished with fresh parsley.
