- Red lentils - 100 grams
- Cauliflower - 200 grams, riced
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until fragrant.
- Stir in the riced cauliflower, cumin, and paprika, cooking for another minute.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the lentils and cauliflower are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches. Return the soup to the pot.
- Season with salt, black pepper, and stir in the lemon juice. Heat through for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
