Ingredients

  • Unsweetened cocoa powder - 30 grams
  • Erythritol - 20 grams
  • Coconut milk (full-fat) - 200 ml
  • Heavy cream - 100 ml
  • Egg yolks - 2 large
  • Vanilla extract - 1 teaspoon
  • Gelatin powder - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small bowl, sprinkle the gelatin over 2 tablespoons of warm water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the cocoa powder, erythritol, and salt, then add the coconut milk and heavy cream. Stir well to combine.
  3. Heat the mixture over medium heat, stirring frequently, until it begins to steam but not boil.
  4. In a separate bowl, whisk the egg yolks and vanilla extract until well combined.
  5. Slowly pour a small amount of the hot cocoa mixture into the egg yolks while whisking continuously to temper the eggs.
  6. Pour the tempered egg yolk mixture back into the saucepan with the cocoa mixture, stirring constantly.
  7. Continue to cook for another 2-3 minutes until the pudding thickens slightly.
  8. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  9. Pour the pudding into serving dishes and allow to cool, then refrigerate for at least 4 hours or until set.
  10. Serve chilled, optionally topped with whipped cream or berries.
