Ingredients

  • Dark chocolate (85% cacao) - 50g
  • Heavy cream - 200ml
  • Egg yolks - 2 large
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Sea salt - a pinch

Steps

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a separate bowl, whisk the egg yolks and erythritol together until pale and creamy.
  3. Add the melted chocolate to the egg yolk mixture, along with the vanilla extract and sea salt. Mix until fully combined.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the cream.
