Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 200 grams, diced (or canned)
  • Red bell pepper - 1 small, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Eggplant - 1 medium (about 250 grams)
  • Cream cheese - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cubed lamb shoulder to the skillet. Cook until the lamb is browned on all sides, about 10 minutes.
  3. Stir in diced tomatoes, red bell pepper, salt, black pepper, cumin, and smoked paprika. Cover and simmer for 20 minutes, until the lamb is tender.
  4. While the lamb is cooking, pierce the eggplant with a fork and roast it in a preheated oven at 200°C for 30 minutes until soft.
  5. Once the eggplant is cooked, scoop out the flesh and place it in a bowl. Mix in cream cheese and grated Parmesan cheese until smooth. Season with salt and pepper to taste.
  6. Serve the lamb mixture over the eggplant puree, garnished with fresh parsley.
