Ingredients
- Lamb shoulder - 300 grams, cubed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomatoes - 200 grams, diced (or canned)
- Red bell pepper - 1 small, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Smoked paprika - 1/2 teaspoon
- Eggplant - 1 medium (about 250 grams)
- Cream cheese - 50 grams
- Parmesan cheese - 30 grams, grated
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add minced garlic and cubed lamb shoulder to the skillet. Cook until the lamb is browned on all sides, about 10 minutes.
- Stir in diced tomatoes, red bell pepper, salt, black pepper, cumin, and smoked paprika. Cover and simmer for 20 minutes, until the lamb is tender.
- While the lamb is cooking, pierce the eggplant with a fork and roast it in a preheated oven at 200°C for 30 minutes until soft.
- Once the eggplant is cooked, scoop out the flesh and place it in a bowl. Mix in cream cheese and grated Parmesan cheese until smooth. Season with salt and pepper to taste.
- Serve the lamb mixture over the eggplant puree, garnished with fresh parsley.
