- Almond flour - 100 grams
- Psyllium husk - 5 grams
- Butter - 50 grams, melted
- Egg - 1 large
- Baking powder - 1 teaspoon
- Salt - a pinch
- Pistachios - 75 grams, finely chopped
- Sweetener (erythritol or similar) - 30 grams
- Vanilla extract - 1 teaspoon
- Unsweetened almond milk - 2 tablespoons
- Butter - 30 grams, for brushing
Steps
- Preheat the oven to 180°C (350°F) and line a small baking dish with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- In another bowl, whisk together the melted butter, egg, sweetener, vanilla extract, and almond milk until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring to form a dough.
- Divide the dough into two equal parts. Roll out one half between two sheets of parchment paper into a thin rectangle.
- Spread half of the finely chopped pistachios over the rolled-out dough.
- Roll the dough tightly to form a log and place it in the prepared baking dish.
- Repeat the rolling and filling process with the second half of the dough and remaining pistachios.
- Brush the top of the baklava with melted butter and bake for 25-30 minutes until golden brown.
- Allow to cool slightly before slicing into pieces and serving.
