Ingredients

  • Almond flour - 100 grams
  • Psyllium husk - 5 grams
  • Butter - 50 grams, melted
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Pistachios - 75 grams, finely chopped
  • Sweetener (erythritol or similar) - 30 grams
  • Vanilla extract - 1 teaspoon
  • Unsweetened almond milk - 2 tablespoons
  • Butter - 30 grams, for brushing

Steps

  1. Preheat the oven to 180°C (350°F) and line a small baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, egg, sweetener, vanilla extract, and almond milk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring to form a dough.
  5. Divide the dough into two equal parts. Roll out one half between two sheets of parchment paper into a thin rectangle.
  6. Spread half of the finely chopped pistachios over the rolled-out dough.
  7. Roll the dough tightly to form a log and place it in the prepared baking dish.
  8. Repeat the rolling and filling process with the second half of the dough and remaining pistachios.
  9. Brush the top of the baklava with melted butter and bake for 25-30 minutes until golden brown.
  10. Allow to cool slightly before slicing into pieces and serving.
