Ingredients

  • Almond flour - 40g
  • Coconut milk - 200ml
  • Unsweetened almond milk - 100ml
  • Erythritol - 30g
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - a pinch
  • Butter - 10g (for greasing)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Grease two small ramekins with butter.
  3. In a mixing bowl, combine the almond flour, coconut milk, almond milk, erythritol, egg, vanilla extract, cinnamon, and salt. Whisk until smooth and well blended.
  4. Pour the mixture evenly into the prepared ramekins.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins (this creates a water bath).
  6. Bake in the preheated oven for about 30 minutes, or until the mixture is set and slightly golden on top.
  7. Remove from the oven and let cool for a few minutes before refrigerating for at least 1 hour.
  8. Serve chilled, optionally garnished with a sprinkle of cinnamon or a few almonds.
