Ingredients
- Almond flour - 40g
- Coconut milk - 200ml
- Unsweetened almond milk - 100ml
- Erythritol - 30g
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - a pinch
- Butter - 10g (for greasing)
Steps
- Preheat the oven to 180°C (350°F).
- Grease two small ramekins with butter.
- In a mixing bowl, combine the almond flour, coconut milk, almond milk, erythritol, egg, vanilla extract, cinnamon, and salt. Whisk until smooth and well blended.
- Pour the mixture evenly into the prepared ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins (this creates a water bath).
- Bake in the preheated oven for about 30 minutes, or until the mixture is set and slightly golden on top.
- Remove from the oven and let cool for a few minutes before refrigerating for at least 1 hour.
- Serve chilled, optionally garnished with a sprinkle of cinnamon or a few almonds.
