Ingredients
- Ground lamb - 300 grams
- Zucchini - 1 medium, grated
- Cauliflower - 200 grams, riced
- Egg - 1 large
- Almond flour - 30 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato paste - 2 tablespoons
- Red bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine the ground lamb, grated zucchini, riced cauliflower, egg, almond flour, minced garlic, chopped onion, tomato paste, paprika, cumin, salt, and black pepper. Mix well until fully combined.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red bell pepper and sauté for about 3-4 minutes until softened.
- Add the sautéed bell pepper to the meat mixture and stir in the chopped parsley.
- Transfer the meat mixture into a greased baking dish, spreading it evenly.
- Drizzle the remaining tablespoon of olive oil over the top of the meat mixture.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
- Remove from the oven, let it rest for a few minutes, then slice and serve warm.
