- Almond flour - 100 grams
- Psyllium husk - 10 grams
- Butter - 50 grams, melted
- Egg - 1 large
- Hazelnuts - 100 grams, finely chopped
- Erythritol - 40 grams
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Water - 50 milliliters
- Stevia - to taste
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, melted butter, and egg. Mix until a dough forms.
- Divide the dough into two equal parts. Roll out one part between two sheets of parchment paper until thin and rectangular.
- In another bowl, mix chopped hazelnuts, erythritol, cinnamon, and vanilla extract to prepare the filling.
- Spread half of the hazelnut mixture evenly over the rolled-out dough.
- Roll the dough tightly into a log, then cut it into small pieces (about 4 cm each).
- Place the pieces into a greased baking dish.
- Roll out the second part of the dough and repeat the filling process, placing it on top of the first layer.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- While baking, prepare the syrup by simmering water and stevia in a small saucepan until slightly thickened.
- Once baklava is done, pour the syrup over the hot baklava and let it cool before serving.
