- Almond flour - 100 grams
- Coconut flour - 20 grams
- Baking powder - 1 teaspoon
- Butter - 50 grams (melted)
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Erythritol - 50 grams
- Water - 100 ml
- Lemon juice - 1 tablespoon
- Almond slivers - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and erythritol.
- In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Shape the dough into small balls and place them on a lined baking tray, flattening them slightly.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- While the cookies are baking, prepare the syrup by combining water, erythritol, and lemon juice in a saucepan over medium heat.
- Bring the mixture to a boil, then reduce heat and let simmer for 10 minutes until slightly thickened.
- Once the cookies are out of the oven, allow them to cool slightly before drizzling the syrup over them.
- Garnish with almond slivers and serve warm or at room temperature.
