Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 20 grams
  • Baking powder - 1 teaspoon
  • Butter - 50 grams (melted)
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Erythritol - 50 grams
  • Water - 100 ml
  • Lemon juice - 1 tablespoon
  • Almond slivers - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and erythritol.
  3. In a separate bowl, whisk together the melted butter, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Shape the dough into small balls and place them on a lined baking tray, flattening them slightly.
  6. Bake in the preheated oven for 20-25 minutes or until golden brown.
  7. While the cookies are baking, prepare the syrup by combining water, erythritol, and lemon juice in a saucepan over medium heat.
  8. Bring the mixture to a boil, then reduce heat and let simmer for 10 minutes until slightly thickened.
  9. Once the cookies are out of the oven, allow them to cool slightly before drizzling the syrup over them.
  10. Garnish with almond slivers and serve warm or at room temperature.
