Ingredients
- Cauliflower - 400 grams, grated

- Butter - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable or chicken broth - 250 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Start by grating the cauliflower using a box grater or food processor until it resembles rice.
- In a large skillet, heat the olive oil and butter over medium heat until melted.
- Add the finely chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the grated cauliflower to the skillet and mix well with the onion and garlic.
- Pour in the broth, then season with salt, black pepper, and paprika. Stir to combine.
- Cover the skillet with a lid and let it simmer for about 10-12 minutes, stirring occasionally, until the cauliflower is tender and has absorbed most of the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes to steam.
- Fluff the cauliflower rice with a fork and garnish with chopped parsley before serving.
