Ingredients

  • Cauliflower - 400 grams, grated
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable or chicken broth - 250 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Start by grating the cauliflower using a box grater or food processor until it resembles rice.
  2. In a large skillet, heat the olive oil and butter over medium heat until melted.
  3. Add the finely chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the grated cauliflower to the skillet and mix well with the onion and garlic.
  6. Pour in the broth, then season with salt, black pepper, and paprika. Stir to combine.
  7. Cover the skillet with a lid and let it simmer for about 10-12 minutes, stirring occasionally, until the cauliflower is tender and has absorbed most of the liquid.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes to steam.
  9. Fluff the cauliflower rice with a fork and garnish with chopped parsley before serving.
