Ingredients

  • Zucchini - 2 medium
  • Ground lamb or beef - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Diced tomatoes - 100 grams (canned or fresh)
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Paprika - 1 teaspoon
  • Cumin - ½ teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the zucchini in half lengthwise and scoop out the insides using a spoon to create boats. Set aside the scooped flesh.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
  4. Add the ground lamb or beef to the skillet, cooking until browned, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the diced tomatoes, scooped zucchini flesh, parsley, dill, salt, black pepper, paprika, and cumin. Cook for an additional 5 minutes to combine flavors.
  6. Fill the zucchini boats with the meat mixture, pressing down slightly to pack it in.
  7. Place the stuffed zucchini in a baking dish and cover with aluminum foil.
  8. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender.
  9. Remove from the oven and let it cool for a few minutes before serving.
