- Zucchini - 2 medium
- Ground lamb or beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Diced tomatoes - 100 grams (canned or fresh)
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Paprika - 1 teaspoon
- Cumin - ½ teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- Slice the zucchini in half lengthwise and scoop out the insides using a spoon to create boats. Set aside the scooped flesh.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the ground lamb or beef to the skillet, cooking until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced tomatoes, scooped zucchini flesh, parsley, dill, salt, black pepper, paprika, and cumin. Cook for an additional 5 minutes to combine flavors.
- Fill the zucchini boats with the meat mixture, pressing down slightly to pack it in.
- Place the stuffed zucchini in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender.
- Remove from the oven and let it cool for a few minutes before serving.
