Ingredients

  • Walnuts - 100 grams
  • Almond flour - 50 grams
  • Cocoa powder - 15 grams
  • Erythritol - 30 grams
  • Coconut oil - 20 grams
  • Vanilla extract - 1 teaspoon
  • Water - 100 ml
  • Salt - a pinch

Steps

  1. In a medium saucepan, combine the water, erythritol, cocoa powder, and a pinch of salt. Heat over medium heat, stirring until the erythritol and cocoa are completely dissolved.
  2. Once the mixture begins to simmer, reduce the heat and add the almond flour and coconut oil. Stir continuously for about 5 minutes until the mixture thickens to a paste-like consistency.
  3. Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly.
  4. While the mixture is cooling, chop the walnuts into smaller pieces. Once the mixture is cool enough to handle, add the walnuts and mix until they are fully coated.
  5. Transfer the mixture onto a sheet of parchment paper and shape it into a log. Roll tightly and wrap in the parchment, sealing the ends.
  6. Refrigerate for at least 2 hours or until firm. Once set, slice into pieces to serve.
