- Walnuts - 100 grams
- Almond flour - 50 grams
- Cocoa powder - 15 grams
- Erythritol - 30 grams
- Coconut oil - 20 grams
- Vanilla extract - 1 teaspoon
- Water - 100 ml
- Salt - a pinch
Steps
- In a medium saucepan, combine the water, erythritol, cocoa powder, and a pinch of salt. Heat over medium heat, stirring until the erythritol and cocoa are completely dissolved.
- Once the mixture begins to simmer, reduce the heat and add the almond flour and coconut oil. Stir continuously for about 5 minutes until the mixture thickens to a paste-like consistency.
- Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly.
- While the mixture is cooling, chop the walnuts into smaller pieces. Once the mixture is cool enough to handle, add the walnuts and mix until they are fully coated.
- Transfer the mixture onto a sheet of parchment paper and shape it into a log. Roll tightly and wrap in the parchment, sealing the ends.
- Refrigerate for at least 2 hours or until firm. Once set, slice into pieces to serve.
