- Erythritol (or other low-carb sweetener) - 30 grams
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Water - 100 milliliters
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted butter, egg, and cream cheese until a dough forms.
- Divide the dough into two equal portions and roll out one portion between two sheets of parchment paper until thin.
- In another bowl, mix chopped walnuts, erythritol, cinnamon, and vanilla extract to create the filling.
- Spread the walnut mixture evenly over the rolled-out dough.
- Roll out the second portion of dough and place it over the filling, sealing the edges carefully.
- Cut the layered dough into diamond or square shapes with a sharp knife.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- While the baklava is baking, prepare a simple syrup by boiling water and erythritol together for 5 minutes, then let it cool.
- Once the baklava is done, remove it from the oven and pour the cooled syrup over the top.
- Allow to cool for at least 10 minutes before serving.
