Ingredients

  • Almond flour - 150 grams
  • Butter (melted) - 60 grams
  • Egg - 1 large
  • Cream cheese - 60 grams
  • Walnuts (chopped) - 100 grams
  • Erythritol (or other low-carb sweetener) - 30 grams
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Water - 100 milliliters

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, egg, and cream cheese until a dough forms.
  3. Divide the dough into two equal portions and roll out one portion between two sheets of parchment paper until thin.
  4. In another bowl, mix chopped walnuts, erythritol, cinnamon, and vanilla extract to create the filling.
  5. Spread the walnut mixture evenly over the rolled-out dough.
  6. Roll out the second portion of dough and place it over the filling, sealing the edges carefully.
  7. Cut the layered dough into diamond or square shapes with a sharp knife.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown.
  9. While the baklava is baking, prepare a simple syrup by boiling water and erythritol together for 5 minutes, then let it cool.
  10. Once the baklava is done, remove it from the oven and pour the cooled syrup over the top.
  11. Allow to cool for at least 10 minutes before serving.
