Ingredients

  • Cauliflower - 300 grams (about half a medium head)
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Green bell pepper - 1 small, diced
  • Carrot - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, diced red and green bell peppers, and diced carrot to the skillet. Sauté for another 4-5 minutes until the vegetables are tender.
  4. Stir in the riced cauliflower, ground cumin, paprika, salt, and black pepper. Mix well and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  5. Remove from heat and stir in the chopped fresh parsley. Serve warm.
