Ingredients
- Cauliflower - 300 grams (about half a medium head)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 small, diced
- Green bell pepper - 1 small, diced
- Carrot - 1 small, diced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced red and green bell peppers, and diced carrot to the skillet. Sauté for another 4-5 minutes until the vegetables are tender.
- Stir in the riced cauliflower, ground cumin, paprika, salt, and black pepper. Mix well and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Remove from heat and stir in the chopped fresh parsley. Serve warm.
