Ingredients

  • Cauliflower rice - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
  4. Add the diced tomato, ground cumin, paprika, salt, and black pepper, cooking for another 3 minutes until the tomatoes soften.
  5. Stir in the cauliflower rice, mixing well with the vegetable mixture.
  6. Pour in the vegetable broth and bring to a simmer, then cover and reduce heat to low.
  7. Cook for 10-12 minutes until the cauliflower rice is tender and the liquid is absorbed.
  8. Remove from heat, stir in the chopped parsley and lemon juice, and adjust seasoning if necessary.
