- Cauliflower rice - 400 grams
- Olive oil - 2 tablespoons

- Garlic - 2 cloves, minced
- Bell pepper - 1/2 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 250 ml
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
- Add the diced tomato, ground cumin, paprika, salt, and black pepper, cooking for another 3 minutes until the tomatoes soften.
- Stir in the cauliflower rice, mixing well with the vegetable mixture.
- Pour in the vegetable broth and bring to a simmer, then cover and reduce heat to low.
- Cook for 10-12 minutes until the cauliflower rice is tender and the liquid is absorbed.
