Ingredients

  • Broccoli - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Parmesan cheese - 30 grams, grated (optional for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the broccoli to the pot and sauté for another 3-4 minutes.
  5. Pour in the vegetable broth, bring to a boil, then reduce heat and let simmer for 15 minutes, or until the broccoli is tender.
  6. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  7. Return the pureed soup to the pot, stir in the heavy cream, and season with salt, black pepper, and lemon juice to taste.
  8. Heat gently until warmed through, then serve hot, garnished with grated Parmesan cheese if desired.
