Ingredients
- Red bell peppers - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red bell peppers in half, remove the seeds, and place them on a baking sheet, cut side down. Drizzle with 1 tablespoon of olive oil.
- Roast the peppers in the preheated oven for about 20 minutes or until the skins are blistered and charred.
- While the peppers are roasting, heat the remaining tablespoon of olive oil in a pot over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh.
- Add the chopped peppers to the pot with the onions and garlic, then pour in the vegetable broth. Stir in the cumin and paprika.
- Bring the mixture to a simmer and cook for 5-10 minutes to let the flavors meld.
- Use an immersion blender to puree the soup until smooth. Stir in the heavy cream and season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
