Ingredients
- Almond flour - 100 grams
- Psyllium husk - 10 grams
- Butter - 50 grams, melted
- Egg - 1 large
- Salt - a pinch
- Walnuts - 50 grams, finely chopped
- Almonds - 50 grams, finely chopped
- Cinnamon - 1 teaspoon
- Sweetener (erythritol or stevia) - 2 tablespoons
- Water - 100 ml
- Vanilla extract - 1 teaspoon
- Butter - 30 grams, for brushing
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk, melted butter, egg, and a pinch of salt. Mix until a dough forms.
- Divide the dough in half and roll out each half between two sheets of parchment paper until thin.
- In another bowl, mix the chopped walnuts, chopped almonds, cinnamon, and sweetener together.
- Layer one sheet of dough onto a baking dish and brush with melted butter. Sprinkle half of the nut mixture evenly over the dough.
- Place the second sheet of dough over the nuts and brush with melted butter. Add the remaining nut mixture, then top with the final sheet of dough.
- Brush the top layer generously with melted butter and cut into diamond or square shapes using a sharp knife.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- While the baklava is baking, prepare the syrup by bringing water, vanilla extract, and sweetener to a simmer in a small saucepan. Stir until the sweetener dissolves, then remove from heat.
- Once the baklava is done baking, pour the syrup over the hot baklava and let it sit for at least 10 minutes before serving.
