Ingredients

  • Almond flour - 100 grams
  • Psyllium husk - 10 grams
  • Butter - 50 grams, melted
  • Egg - 1 large
  • Salt - a pinch
  • Walnuts - 50 grams, finely chopped
  • Almonds - 50 grams, finely chopped
  • Cinnamon - 1 teaspoon
  • Sweetener (erythritol or stevia) - 2 tablespoons
  • Water - 100 ml
  • Vanilla extract - 1 teaspoon
  • Butter - 30 grams, for brushing

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, melted butter, egg, and a pinch of salt. Mix until a dough forms.
  3. Divide the dough in half and roll out each half between two sheets of parchment paper until thin.
  4. In another bowl, mix the chopped walnuts, chopped almonds, cinnamon, and sweetener together.
  5. Layer one sheet of dough onto a baking dish and brush with melted butter. Sprinkle half of the nut mixture evenly over the dough.
  6. Place the second sheet of dough over the nuts and brush with melted butter. Add the remaining nut mixture, then top with the final sheet of dough.
  7. Brush the top layer generously with melted butter and cut into diamond or square shapes using a sharp knife.
  8. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  9. While the baklava is baking, prepare the syrup by bringing water, vanilla extract, and sweetener to a simmer in a small saucepan. Stir until the sweetener dissolves, then remove from heat.
  10. Once the baklava is done baking, pour the syrup over the hot baklava and let it sit for at least 10 minutes before serving.
