- Almond flour - 200 grams
- Egg - 1 large
- Cream cheese - 100 grams, softened
- Mozzarella cheese - 150 grams, shredded
- Spinach - 100 grams, fresh or frozen, thawed and drained
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg yolk - 1 (for egg wash)
Steps
- Preheat your oven to 180°C (350°F).
- In a large mixing bowl, combine almond flour, egg, cream cheese, olive oil, salt, and black pepper. Mix until a dough forms.
- If the dough is too sticky, let it sit for a few minutes to firm up.
- In a separate bowl, mix the spinach, mozzarella, and feta cheese until well combined.
- Divide the dough into two equal portions and roll each into a circle about 1/4 inch thick.
- Place a generous amount of the cheese and spinach filling on one half of each dough circle, leaving a border around the edges.
- Fold the other half of the dough over the filling and pinch the edges to seal tightly, creating a half-moon shape.
- Place the börek on a baking sheet lined with parchment paper.
- Brush the tops with the egg yolk to give them a golden color when baked.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
