Ingredients
- Almond milk - 300 ml
- Chia seeds - 2 tablespoons
- Unsweetened shredded coconut - 30 grams
- Pecans - 30 grams, chopped
- Walnuts - 30 grams, chopped
- Stevia or erythritol - 2 tablespoons (adjust to taste)
- Cinnamon powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Sugar-free dark chocolate - 20 grams, grated (for garnish)
Steps
- In a saucepan, combine almond milk, chia seeds, salt, and stevia or erythritol. Stir well and let it sit for about 5 minutes to allow the chia seeds to absorb some liquid.
- Turn on the heat to medium and add the shredded coconut, chopped pecans, walnuts, cinnamon powder, and vanilla extract. Stir continuously for about 10 minutes until the mixture thickens.
- Remove the saucepan from the heat and let it cool for a few minutes.
- Divide the mixture into two serving bowls and refrigerate for at least 1 hour to set.
- Before serving, garnish with grated sugar-free dark chocolate and a sprinkle of additional chopped nuts if desired.
