Ingredients
- Celery root - 300 grams, peeled and diced
- Potato - 150 grams, peeled and diced
- Carrot - 100 grams, peeled and diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced celery root, potato, and carrot to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth, and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for 15-20 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave some pieces whole.
- Stir in the lemon juice, and season with salt and black pepper to taste. Allow the soup to heat through for an additional 2-3 minutes.
- Serve hot, garnished with fresh dill.
