Ingredients

  • Celery root - 300 grams, peeled and diced
  • Potato - 150 grams, peeled and diced
  • Carrot - 100 grams, peeled and diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced celery root, potato, and carrot to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth, and bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for 15-20 minutes, or until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend just half of the soup and leave some pieces whole.
  5. Stir in the lemon juice, and season with salt and black pepper to taste. Allow the soup to heat through for an additional 2-3 minutes.
  6. Serve hot, garnished with fresh dill.
