Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 3 tablespoons
  • Greek yogurt - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1 medium, cut into wedges
  • Bell pepper - 1 medium, cut into squares
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, Greek yogurt, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, mixing well to coat evenly. Cover the bowl and refrigerate for at least 2 hours or overnight for best results.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers, alternating with pieces of red onion and bell pepper.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has a nice char.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Serve hot with pita bread, rice, or a fresh salad.
