- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Plain yogurt - 100 grams
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Cherry tomatoes - 200 grams, for grilling
- Bell pepper - 1 medium, cut into chunks
- Onion - 1 medium, cut into chunks
Steps
- In a large bowl, combine the olive oil, yogurt, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill or barbecue to medium-high heat.
- Thread the marinated lamb, cherry tomatoes, bell pepper chunks, and onion chunks onto skewers, alternating between the ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Garnish with chopped fresh parsley and serve with a side of salad or whole grain pita.
