Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Plain yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 200 grams, for grilling
  • Bell pepper - 1 medium, cut into chunks
  • Onion - 1 medium, cut into chunks

Steps

  1. In a large bowl, combine the olive oil, yogurt, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb, cherry tomatoes, bell pepper chunks, and onion chunks onto skewers, alternating between the ingredients.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Garnish with chopped fresh parsley and serve with a side of salad or whole grain pita.
