Ingredients

  • Red onion - 1 medium

  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the chicken breast into bite-sized cubes and place them in a mixing bowl.
  2. Chop the red bell pepper, zucchini, and red onion into similar-sized pieces and add them to the bowl with the chicken.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper.
  4. Pour the marinade over the chicken and vegetables, mixing well to ensure everything is coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  5. Preheat the grill or BBQ to medium-high heat.
  6. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
