- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cut the chicken breast into bite-sized cubes and place them in a mixing bowl.
- Chop the red bell pepper, zucchini, and red onion into similar-sized pieces and add them to the bowl with the chicken.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper.
- Pour the marinade over the chicken and vegetables, mixing well to ensure everything is coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or BBQ to medium-high heat.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from grill, sprinkle with chopped parsley, and serve hot.
