Ingredients

  • Basmati rice - 150 grams
  • Lamb or beef (cubed) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Water or broth - 300 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Pine nuts (optional) - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the cubed meat to the pot and cook until browned on all sides.
  4. Stir in the salt, black pepper, and paprika, and cook for an additional 2 minutes.
  5. Drain the soaked rice and add it to the pot, stirring gently to combine with the meat and onions.
  6. Pour in the water or broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 10 minutes.
  8. Fluff the rice with a fork, stir in the chopped parsley and toasted pine nuts if using, and serve hot.
