- Basmati rice - 150 grams
- Lamb or beef (cubed) - 200 grams
- Onion (finely chopped) - 1 medium
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Water or broth - 300 ml
- Fresh parsley (chopped) - 2 tablespoons
- Pine nuts (optional) - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the cubed meat to the pot and cook until browned on all sides.
- Stir in the salt, black pepper, and paprika, and cook for an additional 2 minutes.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the meat and onions.
- Pour in the water or broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for an additional 10 minutes.
- Fluff the rice with a fork, stir in the chopped parsley and toasted pine nuts if using, and serve hot.
