- Lamb or beef, diced - 200 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium (about 150 grams)
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium (about 100 grams)
- Potato, diced - 1 medium (about 150 grams)
- Tomato paste - 1 tablespoon
- Red bell pepper, diced - 1 small (about 100 grams)
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Water - 4 cups (1 liter)
- Fresh parsley, chopped - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced lamb or beef and cook until browned on all sides, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot, and sauté for 3-4 minutes until the onion becomes translucent.
- Stir in the diced carrot, potato, and red bell pepper. Cook for another 5 minutes, stirring occasionally.
- Add the tomato paste, cumin powder, black pepper, and salt. Stir well to combine and cook for 2 minutes.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 20-25 minutes until the vegetables are tender.
- Taste the soup and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
