Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and green bell pepper to the pot. Sauté for another 5-7 minutes until the vegetables are slightly softened.
  4. Stir in the diced tomato, salt, black pepper, paprika, and cumin. Cook for another 3-4 minutes until the tomatoes break down.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the vegetable mixture.
  6. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
