- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and green bell pepper to the pot. Sauté for another 5-7 minutes until the vegetables are slightly softened.
- Stir in the diced tomato, salt, black pepper, paprika, and cumin. Cook for another 3-4 minutes until the tomatoes break down.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
