- All-purpose flour - 200 grams
- Active dry yeast - 5 grams
- Warm water - 120 ml
- Olive oil - 15 ml
- Salt - 5 grams
- Ground lamb - 250 grams
- Onion - 1 medium, finely chopped
- Green bell pepper - 1, finely chopped
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Paprika - 5 grams
- Black pepper - 2 grams
- Cumin - 3 grams
- Fresh parsley - 10 grams, chopped
- Egg - 1 (for egg wash)
Steps
- In a bowl, combine warm water and yeast; let it sit for 5 minutes until frothy.
- Add olive oil, salt, and flour to the yeast mixture; knead until a smooth dough forms. Cover and let it rise for 30 minutes.
- In a skillet over medium heat, cook the ground lamb until browned. Add onion, garlic, and bell pepper; sauté until softened.
- Stir in diced tomato, paprika, black pepper, and cumin; cook for 5 more minutes. Remove from heat and mix in chopped parsley.
- Preheat your oven to 220°C (428°F).
- Roll out the dough on a floured surface into an oval shape (about 1 cm thick).
- Transfer the dough to a baking sheet lined with parchment paper. Place the lamb mixture in the center, leaving a border around the edges.
- Fold the edges of the dough over the filling, pinching to create a boat shape.
- Beat the egg and brush the dough edges with the egg wash.
- Bake in the preheated oven for 15-20 minutes until the crust is golden brown. Serve hot.
