Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 120 ml
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Ground lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Green bell pepper - 1, finely chopped
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Paprika - 5 grams
  • Black pepper - 2 grams
  • Cumin - 3 grams
  • Fresh parsley - 10 grams, chopped
  • Egg - 1 (for egg wash)

Steps

  1. In a bowl, combine warm water and yeast; let it sit for 5 minutes until frothy.
  2. Add olive oil, salt, and flour to the yeast mixture; knead until a smooth dough forms. Cover and let it rise for 30 minutes.
  3. In a skillet over medium heat, cook the ground lamb until browned. Add onion, garlic, and bell pepper; sauté until softened.
  4. Stir in diced tomato, paprika, black pepper, and cumin; cook for 5 more minutes. Remove from heat and mix in chopped parsley.
  5. Preheat your oven to 220°C (428°F).
  6. Roll out the dough on a floured surface into an oval shape (about 1 cm thick).
  7. Transfer the dough to a baking sheet lined with parchment paper. Place the lamb mixture in the center, leaving a border around the edges.
  8. Fold the edges of the dough over the filling, pinching to create a boat shape.
  9. Beat the egg and brush the dough edges with the egg wash.
  10. Bake in the preheated oven for 15-20 minutes until the crust is golden brown. Serve hot.
