- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 ml
- Fresh parsley - a handful, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the beef cubes to the pot and brown them on all sides, about 8-10 minutes.
- Season the meat with paprika, ground cumin, salt, and black pepper, stirring well to coat.
- Add the diced bell pepper and chopped tomato, mixing everything together.
- Pour in the water and bring the mixture to a boil.
- Reduce the heat to low and cover the pot, allowing it to simmer for 60 minutes, or until the beef is tender.
- Check occasionally and add more water if needed to prevent sticking.
- Once cooked, taste and adjust seasoning if necessary before serving.
- Garnish with fresh parsley before serving.
