- Lamb shoulder - 300 grams, cubed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 150 ml
- Pita or burger buns - 2
- Fresh parsley - a handful, chopped
- Sliced tomatoes - 1 medium
- Sliced cucumbers - 1 medium
- Yogurt - 2 tablespoons
Steps
- Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Add the cubed lamb shoulder to the skillet, browning it on all sides.
- Stir in the diced bell pepper, tomato paste, cumin, paprika, salt, and black pepper. Mix well.
- Pour in the water, bring to a simmer, then reduce the heat. Cover and cook for about 45 minutes, or until the lamb is tender.
- While the lamb is cooking, prepare the buns by lightly toasting them.
- Once the lamb is cooked, assemble the burgers by placing the lamb mixture on the bottom half of each bun.
- Top with fresh parsley, sliced tomatoes, and cucumbers. Add a dollop of yogurt on top, then close the burgers with the top half of the buns.
- Serve immediately with your favorite side dishes.
