Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 150 ml
  • Pita or burger buns - 2
  • Fresh parsley - a handful, chopped
  • Sliced tomatoes - 1 medium
  • Sliced cucumbers - 1 medium
  • Yogurt - 2 tablespoons

Steps

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, and sauté until translucent.
  2. Add the cubed lamb shoulder to the skillet, browning it on all sides.
  3. Stir in the diced bell pepper, tomato paste, cumin, paprika, salt, and black pepper. Mix well.
  4. Pour in the water, bring to a simmer, then reduce the heat. Cover and cook for about 45 minutes, or until the lamb is tender.
  5. While the lamb is cooking, prepare the buns by lightly toasting them.
  6. Once the lamb is cooked, assemble the burgers by placing the lamb mixture on the bottom half of each bun.
  7. Top with fresh parsley, sliced tomatoes, and cucumbers. Add a dollop of yogurt on top, then close the burgers with the top half of the buns.
  8. Serve immediately with your favorite side dishes.
