Ingredients

  • Lean lamb or beef - 200 grams, diced
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, finely chopped
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Eggs - 2 large

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the diced green bell pepper and garlic, cooking for an additional 2 minutes.
  4. Add the diced meat to the skillet, season with paprika, black pepper, and salt, and cook until browned, about 8-10 minutes.
  5. Stir in the diced tomato and cook for another 5 minutes until the tomato softens and the mixture is well combined.
  6. Make two small wells in the meat mixture and crack an egg into each well.
  7. Cover the skillet and cook until the eggs are set to your liking, about 3-5 minutes.
  8. Garnish with fresh parsley before serving.
