Ingredients

  • Soft white cheese (like feta or ricotta) - 100 grams
  • Honey - 15 ml
  • Ripe melon (such as cantaloupe or honeydew) - 150 grams, diced
  • Fresh mint leaves - 10 grams, chopped
  • Black pepper - to taste

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and roll it out into an oval shape, about 1 cm thick.
  7. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  8. Spread the soft cheese evenly over the dough, leaving a small border around the edges.
  9. Drizzle honey over the cheese layer, then evenly distribute the diced melon on top.
