- Egg white - 1 large

- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Powdered sugar (for dusting) - as needed
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the ground almonds, all-purpose flour, powdered sugar, baking powder, and salt.
- In a separate bowl, cream the softened butter until light and fluffy. Add the egg white, vanilla extract, and lemon zest, mixing until well combined.
- Gradually add the dry ingredients to the butter mixture, stirring until a smooth dough forms.
- Using your hands, shape the dough into small balls (about 2.5 cm in diameter) and place them on the prepared baking sheet, leaving space between each cookie.
- Flatten each ball slightly with your hand and bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once completely cool, dust the cookies with powdered sugar before serving.
