Ingredients

  • Unsalted butter, softened - 75 grams
  • Egg white - 1 large
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Powdered sugar (for dusting) - as needed

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the ground almonds, all-purpose flour, powdered sugar, baking powder, and salt.
  3. In a separate bowl, cream the softened butter until light and fluffy. Add the egg white, vanilla extract, and lemon zest, mixing until well combined.
  4. Gradually add the dry ingredients to the butter mixture, stirring until a smooth dough forms.
  5. Using your hands, shape the dough into small balls (about 2.5 cm in diameter) and place them on the prepared baking sheet, leaving space between each cookie.
  6. Flatten each ball slightly with your hand and bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden.
  7. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. Once completely cool, dust the cookies with powdered sugar before serving.
