Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Red pepper flakes - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and place them in a food processor. Pulse until they resemble rice or pasta.
  3. Transfer the cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
  4. In a large bowl, combine the cauliflower rice, olive oil, minced garlic, red pepper flakes, dried oregano, salt, and black pepper. Mix until well coated.
  5. Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes, stirring halfway through until golden brown.
  6. While the cauliflower is roasting, heat a skillet over medium heat. Add the halved cherry tomatoes and sauté for about 5 minutes until they soften.
  7. Once the cauliflower is done, add it to the skillet with the tomatoes. Stir in the grated Parmesan cheese, fresh parsley, and lemon juice. Cook for an additional 2-3 minutes until everything is well combined and heated through.
  8. Serve immediately, garnished with extra parsley and Parmesan cheese if desired.
