Ingredients
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Red pepper flakes - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and place them in a food processor. Pulse until they resemble rice or pasta.
- Transfer the cauliflower rice to a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the cauliflower rice, olive oil, minced garlic, red pepper flakes, dried oregano, salt, and black pepper. Mix until well coated.
- Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes, stirring halfway through until golden brown.
- While the cauliflower is roasting, heat a skillet over medium heat. Add the halved cherry tomatoes and sauté for about 5 minutes until they soften.
- Once the cauliflower is done, add it to the skillet with the tomatoes. Stir in the grated Parmesan cheese, fresh parsley, and lemon juice. Cook for an additional 2-3 minutes until everything is well combined and heated through.
- Serve immediately, garnished with extra parsley and Parmesan cheese if desired.
