Ingredients
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Kalamata olives - 50 grams, pitted and sliced
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the cauliflower and cut it into florets. Steam the florets for about 8-10 minutes until tender.
- Once steamed, transfer the cauliflower to a food processor and pulse until it resembles spaghetti or rice. Be careful not to over-process.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the processed cauliflower to the skillet and mix well with the garlic. Cook for about 5 minutes, stirring occasionally.
- Incorporate the cherry tomatoes, olives, red pepper flakes, salt, and black pepper into the skillet. Cook for another 5-7 minutes until the tomatoes soften.
- Remove from heat and stir in the crumbled feta cheese and chopped parsley.
- Serve warm, garnished with extra parsley if desired.
