Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them in a bowl.
  3. Drizzle 1 tablespoon of olive oil over the cauliflower and season with salt and black pepper. Toss well to coat.
  4. Spread the cauliflower on a baking sheet and roast in the preheated oven for 20 minutes or until golden and tender.
  5. While the cauliflower is roasting, prepare the dressing by mixing the remaining olive oil, lemon juice, and minced garlic in a small bowl.
  6. In a large mixing bowl, combine the roasted cauliflower, cherry tomatoes, cucumber, red onion, and parsley.
  7. Pour the dressing over the salad and gently toss to combine.
  8. Serve immediately or chill in the refrigerator for 10-15 minutes before serving.
