Ingredients
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them in a bowl.
- Drizzle 1 tablespoon of olive oil over the cauliflower and season with salt and black pepper. Toss well to coat.
- Spread the cauliflower on a baking sheet and roast in the preheated oven for 20 minutes or until golden and tender.
- While the cauliflower is roasting, prepare the dressing by mixing the remaining olive oil, lemon juice, and minced garlic in a small bowl.
- In a large mixing bowl, combine the roasted cauliflower, cherry tomatoes, cucumber, red onion, and parsley.
- Pour the dressing over the salad and gently toss to combine.
- Serve immediately or chill in the refrigerator for 10-15 minutes before serving.
