Ingredients

  • Cauliflower - 400 grams (about 1 medium head)
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 100 grams
  • Bell pepper - 50 grams, diced
  • Black olives - 30 grams, sliced
  • Fresh basil - a few leaves for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower and cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice or fine crumbs.
  4. Transfer the processed cauliflower to a clean kitchen towel and squeeze out excess moisture.
  5. In a mixing bowl, combine the cauliflower, egg, mozzarella cheese, Parmesan cheese, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 25-30 minutes, or until golden brown and firm.
  8. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  9. Top with diced bell peppers, sliced black olives, and additional mozzarella cheese if desired.
  10. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, let it cool for a few minutes, then garnish with fresh basil before slicing and serving.
