  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Begin by ricing the cauliflower using a food processor or box grater until it resembles rice grains.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until fragrant.
  4. Stir in the riced cauliflower and optional green peas, mixing well to incorporate with the veggies.
  5. Pour in the vegetable broth, then add dried thyme, salt, and black pepper. Bring the mixture to a simmer.
