- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Begin by ricing the cauliflower using a food processor or box grater until it resembles rice grains.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for an additional 2-3 minutes until fragrant.
- Stir in the riced cauliflower and optional green peas, mixing well to incorporate with the veggies.
- Pour in the vegetable broth, then add dried thyme, salt, and black pepper. Bring the mixture to a simmer.
- Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender and the liquid is absorbed.
- Remove from heat, stir in the fresh parsley, and adjust seasoning if necessary before serving.
