- Cauliflower - 400 grams, riced
- Egg - 1 large
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red bell pepper - 50 grams, diced
- Spinach - 50 grams, chopped
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the riced cauliflower, egg, mozzarella cheese, parmesan cheese, cumin, paprika, salt, and black pepper. Mix well until a dough forms.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a rectangular shape, about 1 cm thick.
- Bake the cauliflower base in the preheated oven for 20 minutes until golden brown.
- While the crust is baking, heat olive oil in a skillet over medium heat. Sauté the diced red bell pepper and chopped spinach until softened, about 5 minutes.
- Remove the crust from the oven, and evenly distribute the sautéed vegetables over the top.
- Sprinkle crumbled feta cheese and chopped parsley over the vegetables.
- Return the pide to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
