Ingredients

  • Cauliflower - 400 grams, riced
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 50 grams, diced
  • Spinach - 50 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the riced cauliflower, egg, mozzarella cheese, parmesan cheese, cumin, paprika, salt, and black pepper. Mix well until a dough forms.
  3. Line a baking sheet with parchment paper and spread the cauliflower mixture into a rectangular shape, about 1 cm thick.
  4. Bake the cauliflower base in the preheated oven for 20 minutes until golden brown.
  5. While the crust is baking, heat olive oil in a skillet over medium heat. Sauté the diced red bell pepper and chopped spinach until softened, about 5 minutes.
  6. Remove the crust from the oven, and evenly distribute the sautéed vegetables over the top.
  7. Sprinkle crumbled feta cheese and chopped parsley over the vegetables.
  8. Return the pide to the oven and bake for an additional 10 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, let cool for a few minutes, slice, and serve warm.
