Ingredients
- Cauliflower - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Greek yogurt - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - a pinch
- Parsley - 2 tablespoons, chopped
Steps
- Cut the cauliflower into florets and rinse under cold water.
- In a large pot, bring salted water to a boil and add the cauliflower florets. Cook for about 10-12 minutes or until tender.
- While the cauliflower is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
- Drain the cooked cauliflower and add it to a food processor along with the sautéed garlic, Greek yogurt, salt, black pepper, and nutmeg.
- Blend the mixture until smooth and creamy. If needed, adjust seasoning to taste.
- Transfer the Karnabahar Püresi to a serving bowl and garnish with chopped parsley before serving.
