Ingredients

  • Cauliflower - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Greek yogurt - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Parsley - 2 tablespoons, chopped

Steps

  1. Cut the cauliflower into florets and rinse under cold water.
  2. In a large pot, bring salted water to a boil and add the cauliflower florets. Cook for about 10-12 minutes or until tender.
  3. While the cauliflower is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
  4. Drain the cooked cauliflower and add it to a food processor along with the sautéed garlic, Greek yogurt, salt, black pepper, and nutmeg.
  5. Blend the mixture until smooth and creamy. If needed, adjust seasoning to taste.
  6. Transfer the Karnabahar Püresi to a serving bowl and garnish with chopped parsley before serving.
