Ingredients

  • Cauliflower - 300 grams
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the diced carrot and potato to the pot, cooking for another 5 minutes.
  3. Stir in the cauliflower florets, vegetable broth, salt, black pepper, ground cumin, and cayenne pepper (if using). Bring to a boil.
  4. Reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.
  5. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  6. Stir in the lemon juice and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
