- Cauliflower - 300 grams
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the diced carrot and potato to the pot, cooking for another 5 minutes.
- Stir in the cauliflower florets, vegetable broth, salt, black pepper, ground cumin, and cayenne pepper (if using). Bring to a boil.
- Reduce the heat and let it simmer for 15-20 minutes, or until the vegetables are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
