Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Cauliflower - 300 grams, cut into florets
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red pepper flakes - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. 1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3. Add the minced garlic and sauté for another minute until fragrant.
  4. 4. Stir in the cauliflower florets, red pepper flakes, paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
  5. 5. Pour in the vegetable broth and cover the skillet. Let it simmer for 10 minutes, or until the cauliflower is tender.
