- Pasta (penne or fusilli) - 200 grams
- Cauliflower - 300 grams, cut into florets
- Olive oil - 3 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Red pepper flakes - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Parmesan cheese (optional) - 30 grams, grated
Steps
- 1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- 3. Add the minced garlic and sauté for another minute until fragrant.
- 4. Stir in the cauliflower florets, red pepper flakes, paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
- 5. Pour in the vegetable broth and cover the skillet. Let it simmer for 10 minutes, or until the cauliflower is tender.
- 6. Add the cooked pasta to the skillet and toss well to combine with the cauliflower mixture.
- 7. Remove from heat and stir in the chopped parsley and lemon juice.
- 8. Serve hot, topped with grated Parmesan cheese if desired.
