- Cauliflower - 300 grams
- Eggs - 2 large
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, finely chopped
- Fresh dill - 1 tablespoon, finely chopped
- Almond flour - 30 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- Begin by washing and cutting the cauliflower into florets. Steam the florets for about 10 minutes until tender.
- Once steamed, let the cauliflower cool slightly, then transfer it to a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the squeezed cauliflower, eggs, crumbled feta cheese, chopped parsley, chopped dill, almond flour, baking powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, drop spoonfuls of the cauliflower mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Serve warm.
