Ingredients

  • Cauliflower - 300 grams
  • Ground beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the cauliflower into florets and steam them for about 5-7 minutes until tender. Drain and let cool.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  4. Add ground beef to the skillet, cooking until browned. Drain any excess fat.
  5. Stir in the tomato paste, canned diced tomatoes, oregano, basil, salt, and pepper. Let the mixture simmer for about 10 minutes to combine the flavors.
  6. In a food processor, pulse the steamed cauliflower until it resembles a rice-like texture.
  7. In a baking dish, spread half of the beef mixture on the bottom, followed by half of the processed cauliflower. Sprinkle with half of the mozzarella cheese.
  8. Repeat the layering process with the remaining beef mixture, cauliflower, and top with the remaining mozzarella and grated Parmesan cheese.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
