- Cauliflower - 300 grams
- Ground beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 200 grams
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cut the cauliflower into florets and steam them for about 5-7 minutes until tender. Drain and let cool.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add ground beef to the skillet, cooking until browned. Drain any excess fat.
- Stir in the tomato paste, canned diced tomatoes, oregano, basil, salt, and pepper. Let the mixture simmer for about 10 minutes to combine the flavors.
- In a food processor, pulse the steamed cauliflower until it resembles a rice-like texture.
- In a baking dish, spread half of the beef mixture on the bottom, followed by half of the processed cauliflower. Sprinkle with half of the mozzarella cheese.
- Repeat the layering process with the remaining beef mixture, cauliflower, and top with the remaining mozzarella and grated Parmesan cheese.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
