- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 100 grams, crumbled
- Kalamata olives - 50 grams, pitted and sliced
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into florets and steam them for about 10 minutes until tender. Drain and let cool slightly.
- In a food processor, blend the steamed cauliflower until it reaches a smooth, creamy consistency. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cauliflower puree to the skillet and mix well. Season with red pepper flakes, salt, and black pepper to taste.
- Transfer the mixture to a baking dish, sprinkle crumbled feta cheese and sliced olives on top.
- Bake in the preheated oven for 10-15 minutes until heated through and slightly golden.
- Remove from the oven and garnish with chopped parsley before serving.
