Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Kalamata olives - 50 grams, pitted and sliced
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam them for about 10 minutes until tender. Drain and let cool slightly.
  3. In a food processor, blend the steamed cauliflower until it reaches a smooth, creamy consistency. Set aside.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the halved cherry tomatoes and cook for 3-4 minutes until they soften.
  6. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  7. Add the cauliflower puree to the skillet and mix well. Season with red pepper flakes, salt, and black pepper to taste.
  8. Transfer the mixture to a baking dish, sprinkle crumbled feta cheese and sliced olives on top.
  9. Bake in the preheated oven for 10-15 minutes until heated through and slightly golden.
  10. Remove from the oven and garnish with chopped parsley before serving.
