Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Feta cheese - 100 grams, crumbled
- Almond flour - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Preheat your oven to 200°C (392°F).
- Cut the cauliflower into florets and steam them for about 10 minutes until tender.
- Once steamed, let the cauliflower cool slightly, then mash it in a large bowl until smooth.
- Add the egg, crumbled feta cheese, almond flour, chopped parsley, minced garlic, cumin, salt, and black pepper to the mashed cauliflower. Mix well until all ingredients are combined.
- Shape the mixture into small patties, about 5 cm in diameter.
- Heat olive oil in a non-stick skillet over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown.
- Transfer the cooked köftes to a baking tray and bake in the preheated oven for an additional 10 minutes to ensure they are cooked through.
- Serve hot with a side of yogurt or salad.
