Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Feta cheese - 100 grams, crumbled
  • Almond flour - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)

Steps

  1. Preheat your oven to 200°C (392°F).
  2. Cut the cauliflower into florets and steam them for about 10 minutes until tender.
  3. Once steamed, let the cauliflower cool slightly, then mash it in a large bowl until smooth.
  4. Add the egg, crumbled feta cheese, almond flour, chopped parsley, minced garlic, cumin, salt, and black pepper to the mashed cauliflower. Mix well until all ingredients are combined.
  5. Shape the mixture into small patties, about 5 cm in diameter.
  6. Heat olive oil in a non-stick skillet over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown.
  7. Transfer the cooked köftes to a baking tray and bake in the preheated oven for an additional 10 minutes to ensure they are cooked through.
  8. Serve hot with a side of yogurt or salad.
