Ingredients
- Basmati rice - 150 grams
- Eggplants - 2 medium-sized
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Green bell pepper - 1, diced
- Tomato - 1 medium, diced
- Tomato paste - 1 tablespoon
- Vegetable broth - 400 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplants in half lengthwise and scoop out some flesh to create a boat-like shape. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced green bell pepper, and diced tomato. Cook for another 5 minutes until softened.
- Add the tomato paste, cumin, paprika, salt, and black pepper. Cook for 2 minutes, mixing well.
- Add the basmati rice to the pan and stir to coat the rice with the spices. Pour in the vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, rinse the eggplants under cold water to remove excess salt. Pat dry with a kitchen towel.
- In a baking dish, place the eggplant halves cut-side up. Drizzle with the remaining olive oil and fill each half with the cooked rice mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove from the oven, garnish with fresh parsley, and serve warm.
