Ingredients

  • Basmati rice - 150 grams
  • Eggplants - 2 medium-sized
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Green bell pepper - 1, diced
  • Tomato - 1 medium, diced
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 400 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplants in half lengthwise and scoop out some flesh to create a boat-like shape. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
  3. In a pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic, diced green bell pepper, and diced tomato. Cook for another 5 minutes until softened.
  5. Add the tomato paste, cumin, paprika, salt, and black pepper. Cook for 2 minutes, mixing well.
  6. Add the basmati rice to the pan and stir to coat the rice with the spices. Pour in the vegetable broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
  8. While the rice is cooking, rinse the eggplants under cold water to remove excess salt. Pat dry with a kitchen towel.
  9. In a baking dish, place the eggplant halves cut-side up. Drizzle with the remaining olive oil and fill each half with the cooked rice mixture.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  11. Remove from the oven, garnish with fresh parsley, and serve warm.
