Ingredients
- Shrimp (peeled and deveined) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Lemon juice - 2 tablespoons
- Cherry tomatoes (halved) - 100 grams
- Cucumber (diced) - 100 grams
- Red onion (thinly sliced) - 1/4 medium
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 3-5 minutes, or until they turn pink and opaque. Season with salt and black pepper to taste.
- Once cooked, remove the shrimp from heat and let them cool for a few minutes.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
- Add the cooled shrimp to the bowl and drizzle with lemon juice. Toss gently to combine all the ingredients.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
