Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Lemon juice - 2 tablespoons
  • Cherry tomatoes (halved) - 100 grams
  • Cucumber (diced) - 100 grams
  • Red onion (thinly sliced) - 1/4 medium
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet and cook for 3-5 minutes, or until they turn pink and opaque. Season with salt and black pepper to taste.
  3. Once cooked, remove the shrimp from heat and let them cool for a few minutes.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
  5. Add the cooled shrimp to the bowl and drizzle with lemon juice. Toss gently to combine all the ingredients.
  6. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
